the "pipirrana" is a spanish type of salad, that you can also call “salpicon” , made of tomato, green pepper and onion.
it's so easy to make and so fresh that in Spain, it's made nearly in every home during the summer. the best thing about it, is that you can combine it with many things, shrimps, potatoes, mussels, surimi bits, etc…
the basic recipe is the following

2 tomatoes
1 green pepper
1/2 onion
wine vinegar
olive oil
salt
chop all the ingredients and add the element that you prefer, in this case we will use mussels. it's better to buy them fresh. cook them in a steamer, and when they are done throw away one of the shells and leave the other one with the mussel in it. it will make them look much nicer in the plate.
after that you only have to add the vinaigrette and keep it for a while in the fridge. you can make it from one day to another, and it will taste much better.
