This is the look of my chocolate muffins after the 15min oven baking.
Can any one tell me what did I do wrong?
Because I know muffins shouldn't look this way...
I was reading Farmgirl Fare, when I came through a recipe of some good looking chocolate muffins. It was an emergency, and so it said in the recipe "For Small But Serious Chocolate Cake Emergencies", I thought it was perfect. But you'll see that there's no possible comparision between hers and mines ;)
I later thought that maybe the emergency was me trying to bake muffins, jijiji ;))
(right now I'm trying to get even with my baking, and there's an apple crumb pie baking in my oven, I'll write about it later)
I'll post a pic of those I made soon. Tattum, so you made them alright this time... what did you change ? Looking at your pic, there was really too much in them :)You gotta fill them only up to the half of the molds, but I bet you know that now.

Hi Cindy! How kind of you (and Paz) for giving me a hand! ok, I think it's that, too much filling, I took a photo of them before baking and they look really full. I'll post it, so that if you have time you can look at it. The filling was a fact that I thought about, but didn't find any special specifications on any recipes I had around. Good to know, but how much should it have, 1/3 of papercup, maybe?
Hi Will, it can also be the yeast, yes, but I don't think I used a short quantity...just what the recipe said. but the temperature, can be also the reason...I definitely think it was the filling...I filled like 3/4 of the paper cups....
I will try again...

Might be the too much levadura (leavening) problem. While baking they rise and then sort of burst like a balloon and collapse back down.
Too hot oven can cause the batter to get over-excited and do something similar.
The recipe you point to looks okay so oven temp looks like the culprit.
Me, I'm having my own problems with choco muffins so take my advice/comments with a grain or two of salt.

As Paz asked me to check out, here I am lol. I'm a regular baker. Still when I look at the recipe I don't know what can be done wrong, but obviously there is something wrong with your muffins. All I can think of is : did you put too much mixture in the molds ? If so, when cooking during the first few minutes, the mixture comes out, and therefore the result looks like yours.
I can also see paper liners helped in Farmgirl's recipe, so the problem might also have something to do with the fat you use to grease your molds.
That's all I can think of for now. I'll try make them this weekend, it'll help to sort out the problem.

yes, I think that too, my mum asked me that also...mmm, and yes I opened the oven before the time ...well...they tasted good, maybe too sweet for my taste, and they looked like they were going to be really sponggy, maybe next time... Besos

Hmmm... Tattum, I have no idea, since I'm not a regular baker. I was read that if you open the oven too much the cake/muffin will sink. I dunno. Just guessing.
I have an important question: Despite the look, how did it taste? Delicious, I hope! ;-)
