In Spain when you are sad and you don't want to show it, you say "la procesión va por dentro". It's an expression that comes from the Easter processions that we have in Spain. The catholic processions represent the suffer of the devoted to their saints. It's quite amazing to see all this people slowly and silently (well not always) walking down the street, following the saint from the church, around the town and back again to the church. It depends on the city, but you can see some, mainly in Andalucia, where they sing a "saeta", a devotional song. It's really, impressive!
well, you know where I wanna go...Instead of being at home, lying on the sofa or in bed, feeling sorry for myself, I decided to have a little "capriccio"... an apple cake. Now, here I would love to have an authentic american apple pie recipe, so if any of you knows one, pleeeaaaseee, send it to me!!! (I don't have it easy to find already made pastry, so if you also have the recipe... pleeaassee!!)
so as I was saying, I just thought, oh! come on, Tattum, have a break! so I went to my cookbook shelf, and thought about what I had at home already, and found a perfect recipe, The Inverted Apple Cake. (It really was a pear cake, but no pears in the fridge)
250gr flour
1/2 envelope of dry yeast
185gr white sugar
2 eggs
125gr butter
2 spoons of brown sugar
2 apples
melt the butter with the sugar at slow heat, once the sugar is melted add both eggs already beaten. Mix well. Add the mix to the flour and yeast, mix it but stop once the flour has dissapered.
on a rectangular cake mold, a base of paper (that brown one made for baking) and on top add the 2 spoons of brown sugar spread on the base, after that add the apple cut in pieces, and also spread on the base. to finish just add the flour mix and cook in the oven for 50 min at 180º C.
once it's finished cooking, turn around the mold so that the apples are on top.

Wow! Two recipes for the price of one! Love it! I'd love to try both. I've never made any type of apple cake before. Tattum, I like the idea that I can also substitute with pears. Cool.

Your recipe sounds delicious. You said you would like to have an authentic American Apple Pie Recipe and one for the pastry. I Would love to share mine with you. I have been making this for almost 30 years now and it is always the same--very delicious(we think!). First I have to say that pie crust did not come easily to me even though my Grandmother was a commercial baker and my Mother is a wonderful cook. My pie crust was always hard and tough. I tried every recipe until one day my secretary said to try this one and it is the only one I have used for many years. Very simple-For a 2 crust pie--
2 cups all purpose flour
2/3 cup oil (I use canola since it is light)
1/3 cup of milk
dash of salt
Just mix the liquid in with the dry. It will be very sticky and seem too greasy but it will be wonderful when you are finished.
Form it into a ball and take half and roll out between 2 pieces of plastic wrap or waxed paper. It is a very forgiving crust and you can press it into place if it tears or you need to patch it. Place that half into your pie plate, fill with your filling, roll out the other half and place on top. Pinch edges together and put a few holes in the top. I like to "draw" a picture of whatever fruit I am baking on the top of the crust with a knife to vent steam while baking. You can use this recipe for sweet or savory and if you wish to make a cream pie which only needs one crust you can freeze the other half for later use. When I make it for apple pie I usually add a little cinnamon or nutmeg to the recipe. I think the little brown flecks look nice in the crust. Now the apple pie recipe--
1 cup sugar
1/3 cup all purpose flour
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon salt
8-10 baking apples, peeled and thinly sliced
2 tablespoons butter
Steps--
1)Heat oven to 425 degrees F.
2)For filling--combine sugar, flour, cinnamon, nutmeg, & salt in small bowl. Sprinkle over apple slices. Toss lightly until apple slices are completely coated. Spoon filling into unbaked pie shell. Dot with butter. Moisten pastry edge with water.
3)Cover with top crust. Fold top edge under bottom crust. Flute with fingers or fork. Cut slits or design in top crust for escape of steam.
4)Brush with 2 tablespoons of melted butter.
5) Bake at 425 degrees F. for 10 to 15 minutes or until top crust begins to brown. Reduce oven temperature to 400 degrees F. Bake at 400 F. for 40 minutes.
Sorry this is so long but didn't want to leave out any steps. Sorry it is not in metric measurements. It is sometimes tradition to eat the apple pie with a slice of cheese (My Dad always liked that or some cream or milk over the top). Hope this helps and that it is not so long it bores you. This makes a 10 inch pie. Happy baking.
